The blade's surface treatment with the special Tsuchime metalworking technique underlines the elegant oriental look.
The Gyutoh is considered a slicing knife in Japan, as it is mostly used for slicing meat into thin slices. The rounded shape of the blade means that it can be used in a swinging motion . In Europe, the Gyutoh is generally used as a very sharp all-purpose kitchen knife , with which you can cut pieces of meat and vegetables .
The symmetrical blade is sharpened using the traditional Honbazuke hand technique . This is a three-stage grinding, sharpening and polishing along the entire length of the blade, ensuring an extremely sharp "katana" type blade.
The core of these knives is made of high- quality microcarbide steel and is sheathed with 2 layers of two types of steel with different hardness. Special Japanese steel MC63 is enriched with cobalt, molybdenum and vanadium for higher hardness and durability of the blade . High carbon content in combination with special steel hardening technology CRYODUR® technology gives the knife extreme hardness - approximately 63 degrees Rockwell, for unbeatable and long-lasting sharpness. The metalworking technique called Tsuchime creates a visually stunning and sophisticated appearance of the structured surface.
The ergonomic handle in the traditional "D" shape made of exotic Pakka wood is very pleasant to hold not only thanks to the smooth line, but also the perfectly smooth transition between the blade and the handle and gives each knife a sophisticated look. It perfectly balances the knife and allows safe and comfortable use without hand fatigue . The mosaic decoration on the handle gives the knife a touch of exclusivity and stylishly complements the oriental tuning of the knife . The handle is equipped with a unique Miyabi logo on the metal foot .
