ASPARAGUS WITH HOLLANDA SAUCE AND SHRIMPS

Ingredients
2 kg asparagus
250 g shrimp
150 g butter
3 egg yolks
3 tablespoons water
juice of 1/2 lemon
pepper and salt
parsley or chives

Procedure
1. Peel the asparagus carefully and thoroughly. Cook it in heavily salted water until soft. Let it drain on a cloth napkin.

2. Melt the butter.

3. Beat the egg yolks, three tablespoons of water and lemon juice over low heat until foamy.

4. Slowly stir in the melted butter.

5. If necessary, heat the asparagus a little more in butter and season with salt and pepper.

6. Serve the asparagus with the shrimp and hollandaise sauce.

7. Garnish with a little parsley or chives.

PIZZA WITH ASPARAGUS AND HAM
2 servings

Ingredients
6 stalks of white asparagus
pizza dough
2 slices of ham
75 g mozzarella
grated parmesan cheese
4 tablespoons tomato sauce
arugula

Procedure
1. Make your own pizza dough or use ready-made.

2. Basic pizza dough recipe: Mix 75g of 00 flour, 40dl of water with 7g of fresh yeast, 1 tbsp of olive oil and a pinch of salt. Work the dough and shape it into a ball. Cover with cling film and let it rest for 1 hour or even better - let it rest in the fridge for 24 hours.

3. Prepare tomato sauce seasoned to your liking.

4. Peel the white asparagus and cut off the woody end. Cook the asparagus until al dente.

5. Roll out the dough and spoon the tomato sauce over it, 1 cm from the edge. Do not put too much pizza sauce.

6. Tear the ham into pieces and place them on the pizza along with the asparagus.

7. Spread the cheese pieces on the pizza and grate the Parmesan on top.

8. Bake the pizza in a preheated oven at the highest possible temperature.

9. Garnish with arugula before serving.

AVOCADO SALAD WITH ASPARAGUS

Ingredients
2 ripe avocados
700 g white asparagus
1 pomegranate
1 spring onion
1 lemon
10 tablespoons of olive oil
2 teaspoons balsamic vinegar
1 teaspoon honey
salt and pepper

Procedure
1. Peel the asparagus, cut into pieces and blanch with lemon juice and salt for 15 minutes in a pot.

2. Prepare the dressing by mixing olive oil, balsamic vinegar, honey, salt, pepper and lemon zest and whisk thoroughly.

3. Peel the avocado and cut it into thin slices.

4. Drizzle the avocado with lemon juice.

5. Mix the asparagus, avocado and dressing in a bowl and season to taste.

6. Finally, add chopped spring onions and pomegranate seeds.
